Getting Festive in the Kitchen!

Eep! Its only a month to christmas. How exciting. That means that soon it will be time to erect the christmas tree, hand the decorations, put up the lights and wack out the cheesey christmas music! Yahoooo! I am so excited. It is by far my favourite time of year. I love it! Soooooo much! 

What better way to get festive than with festive snacks! So here is my first festive offering!

White Chocolate Peppermint Millionaire Short Bread.
It is LUSH! Honestly, it is like a super tasty Vicount biscuit. Yum! And the sprincles just add a little extra festive cheer. Do you want the recipe? Of course you do! And here it is! Enjoy…

Ingredients:

About 10 to 12 shortbread fingers

50g melted butter

25g butter

100g icing sugar

1 400g can of condensed milk

100g white choclate

peppermint flavouring

200g plain chocolate

sprinkles, to decorate

Method:

First, line and grease a brownie tray. I used an individual sylicone brownie tray so I just sprayed them with one cal spray.

Take the shortbread biscuits and crush them up. I like to put them in a sandwich bag and wack them against the kitchen counter but the man in the flat below me is a noise nazi so in order not to anoy him I usually just put them in a big bowl and use a large rolling pin like a pestle and mortar instead. It takes longer but at least it doesnt cause unneccesary annoyance.

Once they are crushed, add in the melted butter and a pinch of sugar and mix until it is starting to stick together. Then empty it into the tray and press down into the corners. Place in the fridge.

To prepare the filling, place the butter and white chocolate into a pan and heat until melted. Then add in the condensed milk and continue to heat gently. stir in the the peppermint flavouring, then seive in the icing sugar. Beat together and pour over the biscute base. place in the fridge to set. 

Once set, all that is left to do is melt the plain chocolate and spread over the fudge, adding sprinkles to add a bit of festivity to the mix. Then leave to set once more until the chocolate has hardened. 

And there you go, you should now have a pan of wonderfully feative pepperming shortbread!
